Gen Z is TRANSFORMING Fast Casual (Industry Expert Reveals All)
Fast Casual's Senior Editor Cherryh Cansler joined Restaurant Masterminds to discuss emerging trends and dynamics shaping the fast casual restaurant segment in 2025. The conversation, hosted by Paul Baron alongside co-hosts Paul Molinari and Stacey Kane, explored how Gen Z is dramatically influencing menu innovation and brand storytelling.
Cansler highlighted how Gen Z's distinctive preferences are driving changes in everything from ordering technology to portion sizes. Unlike previous generations, Gen Z expects seamless digital experiences and won't engage with brands that don't align with their values. This has pushed restaurants to be more transparent about their practices and authentic in their communication, particularly on platforms like TikTok.
The discussion took an interesting turn when exploring the impact of GLP-1 weight loss medications on restaurant menus. With 12% of the population having tried these medications and 6% currently using them, restaurants may need to adapt their offerings to accommodate smaller portions and increased protein needs - potentially representing the next major dietary consideration alongside gluten-free and dairy-free options.
Technology adoption emerged as another critical theme, with Cansler noting that while AI and automation are garnering attention, many operators still struggle to understand and implement these tools effectively. The panel agreed that having a robust technology stack is becoming increasingly important for franchise growth, though smaller operators often face challenges in adoption.
The conversation also delved into the evolution of loyalty programs, with Cansler suggesting that traditional "spend X, get X" models may need to evolve toward more experiential rewards to engage younger consumers. She pointed to examples of brands offering early access to menu items or exclusive experiences as potentially more valuable than traditional discounts.
As part of the discussion, Baron announced that Cansler would be joining as co-host of Fast Casual Nation, the longest-running podcast in the fast casual space. The collaboration aims to provide deeper insights into the sector's evolution as it navigates changing consumer preferences, technological advancement, and operational challenges.
